Obtain a more open crumb, with more visible cells, while maintaining good hold and avoiding a moist or gummy crumb.

Homemade gluten-free bread

Cooking on stone with steam.

This method combines controlled proofing, an oven blast at 250°C and a gentler end of cooking. Cooling for 2 hours is part of the protocol: the crumb continues to stabilize after leaving the oven.

Cooking mark

12 min at 250°C with steam, then 27 min at 220°C and finally 8 to 10 min at 200°C door slightly ajar.
